Burgerville introduces its first-ever plant-based, dairy-free ice cream sandwich on May 17, just in time for summer. In collaboration with local partner Ruby Jewel, the Cookies & Caramel Ice Cream Sandwich features dairy-free, sweet and salty caramel ice cream made by Coconut Bliss, and chocolate chip cookies made using gluten-free ingredients from Miffy’s Foods. The ice cream sandwich will be sold in all Burgerville restaurants as part of the everyday menu. 

“Burgerville is excited about the Cookies & Caramel ice cream sandwich,” said Jamie Powell, Vice President of Food and Menu Innovation, “We think it will appeal to our guests regardless of their dietary preferences. They may try it because it’s plant-based, dairy-free, and gluten-free, but they’ll come back for more because it’s delicious. We plan to continue expanding plant-based options on our menu, so look for more to come in the next year.”

“We were really excited when Burgerville asked us to consider making a plant-based ice cream sandwich. It’s the first one we have done for the retail world,” said Lisa Herlinger, CEO of Ruby Jewel. “Because we have a close relationship with Coconut Bliss we wanted to use their existing delicious base. Then, knowing it had to be a plant-based cookie, I began thinking we can also make it gluten-free, so I partnered with Miffy of Miffy's foods. She and I worked many hours with her existing delicious cookie mix and created the perfect ice cream sandwich formula. We are really pleased with the results and hope Burgerville guests will be too.”

In 2019 Burgerville began expanding its plant-based dessert options by adding Coconut Bliss every day and seasonal shakes as non-dairy alternatives to its Alpenrose ice cream. Shakes are hand-blended on separate machines to ensure there is no cross-contamination. And both dairy and non-dairy shakes are priced the same. Last year Burgerville began offering a full plant-based breakfast menu at its PDX Airport restaurant with scrambles and sandwiches featuring ingredients from local partners Hey Babe Cashew Cheese and Field Roast.

The summer season also brings Burgerville’s “Believe in Berries” and Orewashigonians are already celebrating the kickoff. Leading off the menu are local strawberries from Oregon-based Liepold Farms, which are featured in the seasonal shakes, strawberry lemonade made with Columbia Gorge Lemonade, and the seasonal strawberry-lemonade ice cream sandwich also made by Ruby Jewel. In addition, a new seasonal Farm Salad mix with spinach, asparagus, peas, and radishes from Northwest farms is on the menu.

Strawberries will be featured on the May-June seasonal menu before making way for the arrival of Northwest blueberries. On Mother’s Day, May 9, all Moms are invited to enjoy a free 12 oz seasonal strawberry shake (Alpenrose ice cream or Bliss).
